Week 3 Recipes

It is Thanksgiving week! This is always a busy time at our house. We are going to keep this week’s five recipes simple and easy so you can concentrate on your holiday prep. See our Stripped Thanksgiving post for some healthy ideas for your holiday meal! We will eat our BLTs and egg avocado salad on romaine leaves so get plenty of those. If you have a lot of holiday left overs, make the tomato soup on the BLT day! Have a great week and keep it healthy!

Everyday Paleo Beyond Easy Pulled Pork

Ingredients Needed:
6 eggs
2 ripe avocados
4-5 lb pork butt roast
2 1/2 lbs boneless chicken thighs
2 yellow onions
1 red onion
2 whole romaine leaves
1 tomato
4 leeks
6 cloves of garlic
fresh lemon juice (or lime juice)
chili powder
coriander powder
cardamom powder
fenugreek powder
onion powder
dried parsley
chipotle powder
garlic powder
sea salt
black pepper
28 ounce can of Fire Roasted diced tomatoes
6 oz can tomato paste
coconut oil
chicken broth
2 cans full fat coconut milk
ghee or grass fed butter (Kerrygold is my favorite)
