Paleo Egg Roll Soup

  1. 1 tablespoon ghee, avocado oil, or olive oil
  2. 1 pound ground pastured pork
  3. 1 large onion, diced
  4. 32 ounces (4 cups) chicken or beef broth
  5. 1/2 head cabbage, chopped
  6. 2 cups shredded carrots
  7. 1 teaspoon garlic powder
  8. 1 teaspoon onion powder
  9. 1 teaspoon sea salt
  10. 1 teaspoon ground ginger
  11. 2/3 cup coconut aminos
  12. Optional: 2-3 tablespoons tapioca starch
  1. In your skillet, brown the ground pork in the tablespoon of cooking fat with the diced onion; cook until no longer pink
  2. Add in the remaining ingredients and cook for 25 minutes high pressure then quick release the pressure
  3. Remove lid and serve
  4. If you want a thicker soup, remove 1/4 cup of broth from the soup and stir in 2-3 tablespoons of tapioca starch. Reintroduce the slurry and stir well, it will thicken over the next few minutes
